Salento, Puglia
70% Primitivo - 30% Negroamaro
The Primitivo and Negroamaro grapes are hand-harvested in the second half of September, with a very careful selection of the vineyard. The grapes are picked only when reached their full maturity.
After a very gentle de-stemming and a soft crushing, the grapes are vinified separately. The number of delestages and remontages is decided by tasting. The grapes are fermented in stainless steel tanks at a controlled temperature in order to retain the fruity notes. Ageing in stainless steel tanks. Once the malolactic fermentation is completed, the wines are blended together to create the new Nero Oro Rosso Puglia IGP.
Nero Oro Rosso Puglia is a deep ruby red in colour, and the nose displays notes of plum, black cherry and blackberry accompanied by floral hints of dried violets and spices such as tobacco, liquorice and carob. In the mouth it is full, smooth and silky with soft tannins and a long finish.
